On the Day of the Tomato, learn to make two sauces with pesto and red pepper
    
First of April is the day of the Tomato, and nothing better to celebrate the date that prove some dough with a fancy sauce ... tomatoes. Besides tasty, the fruit is lycopene, which protects the body from blood clots. The consumption of tomatoes also helps people with diabetes type 2 to defend itself from arterial damage caused by LDL cholesterol, almost on par with a high dose supplements of vitamin E.

Tomato sauce with red pepper
    
Servings: 4-6. Preparation: 10 min. Cooking: 15 min. Difficulty: Level 1.
    
Ingredients
    
:: 2 cloves garlic, minced
    
:: 1 spoon (soup) of chopped parsley
    
:: 1 chopped fresh red pepper
    
:: 90 ml extra virgin olive oil
    
: 500 g ripe tomatoes, firm, peeled and coarsely chopped
    
:: Salt
    
: 500 g of whole wheat spaghetti or other long dry mass
    
Preparation
    
1. Saute the garlic, parsley and pepper in olive oil in a large skillet over medium heat for 2 minutes, until garlic browns.
    
2. Mix the tomatoes and cook over high heat until it falls apart, about 10 minutes.
    
3. Season with salt and remove from heat.
    
4. Cook the pasta in a pot with boiling salted water until al dente.
    
5. Drain and add the sauce. Stir well over high heat until the sauce adhere to pasta. Serve hot.

Pesto sauce with cherry tomatoes
    
Servings: 4-6. Preparation: 25 min. Cooking: 30 min. Difficulty: Level 1.
    
Ingredients
    
: 750 g cherry tomatoes, halved
    
:: 90 ml extra virgin olive oil
    
:: Salt and freshly ground white pepper
    
:: 60 g fresh basil
    
:: 60 g parmesan cheese, grated
    
:: 2 cloves garlic, peeled
    
:: 45 g blanched almonds
    
: 500 g linguine, spaghetti or other long pasta


    
Preparation
    
1. Preheat oven to 180 º C.
    
2. Arrange the tomatoes on a sheet of wax paper on a baking sheet, cut side facing up and pour 2 spoons (soup) of oil. Lightly sprinkle a little salt and pepper.
    
3. Bake for 15 minutes.
    
4. Combine the basil, Parmesan, garlic, almonds and olive oil in a processor, and blend until smooth. Season with salt and pepper.
    
5. Cook the pasta in a pot with boiling salted water until al dente. Drain well and place in a heated refractory.
    
6. Add the pesto and roasted cherry tomatoes and toss gently. Serve hot.

How to use it: Drink tomato juice regularly. Cook the tomatoes to release more lycopene - grill, fry or bake in the oven with a little olive oil. Although it contains lycopene, ketchup is not the best source, since it will probably consume it in small amounts, besides having the disadvantage of containing salt.

EGGS COOKED IN TOMATO
    
Yield: 4 servings
    
Ingredients
    
:: 5 large, firm tomatoes
    
:: 4 eggs enriched with omega-3
    
:: 1 stalk of spring onion
    
:: 8 torn basil leaves
    
:: Pepper-the-kingdom freshly ground


    
Preparation

    
1. Preheat oven to 180 º C.
    
2. Cut a lid on top of 4 balls. Remove the pulp. Place the tomatoes in a baking pan and break an egg into each. Season with black pepper kingdom and bake for 15 minutes.
    
3. Finely chop the caps, the other tomatoes and squash. Place in a pan with green onions and basil leaves and simmer for 10 minutes.
    
4. Pour the sauce over the stuffed tomatoes and serve immediately.
